Fig Tree is not a fancy venue. Here it is all about the food, from where it comes, how it is raised, and the care and expertise of its preparation. Chef J.P. Holland is very involved in the breeding and genetics of the pork and beef served at Fig Tree. Holland sources his seafood from Greg Abrams. And he has a garden in the back of the restaurant where he is growing mushrooms, tomatoes, peppers, and wax beans. He also has local farmers who source the restaurant.
