Inspired by street food from all over the world, the concept was a chance for Chef Chris Dupont to expand into a new type of food – and to get back to basics.
In 1994, Dupont opened Café Dupont in Springville, AL with $7,000 and a handshake. The location put him in close contact with local farmers and growers, connections which he has continued to utilize through Mix and now Tau Poco.
Opened on a $15,000 budget, Tau Poco’s space has been recreated as a modern blend of cultures and artistic styles. Named to reflect the diversity of food cultures on its menu, Tau Poco is translated from Vietnamese and Spanish to “tiny vessel.” Or, as we say, around the world…just down the street.
