Ross Bridge Presents A Night Of Dining Coupled With Magnificent Wine New Chef At Ross Bridge Introduces Five Course Dinner For Two, Paired With Bottle Of Opus One Wine After five years of study with Frank Stitt at Bottega, Josh Towey has joined the team at Brock's at Renaissance Ross Bridge Golf Resort & Spa, as the restaurant chef. "We feel that Josh will continue the traditions that Brock's Restaurant has built and will add excitement to the dining experience to keep us moving forward" says Chris Townsley, Director of Food and Beverage. Brock's is celebrating Towey's arrival with a limited time offer of a five course dinner for two, paired with the premier wine of California, Opus One. The meal is prepared in Mediterranean fashion and includes items such as trio of sformato with tomato & goat cheese, sweet pea & ricotta, corn & parmesan and medallions of prime beef tenderloin with roasted mushrooms & Point Reyes blue cheese.
Towey is focused on the use of locally grown products and allowing their natural flavors to show through the meal. Towey feels that "straight forward food prepared in simple fashion" is what will set Brock's apart in the Birmingham market. "Taking the subtleties of Opus One and pulling through the flavors with this menu has been an exciting challenge" Josh said of this experience. Brock's Restaurant has received two Wine Spectator Awards since its opening in 2005 and looks forward to celebrating with more wine focused dinners.
