Try Ashley Mac’s Salad Trio at three locations.

Ashley Mac's is open for lunch and dinner at three Birmingham area locations: Cahaba Heights, Inverness, and Riverchase. And all Ashley Mac’s restaurants are locally owned by Ashley and Andy McMakin.
Today I am tasting the Salad Trio at Riverchase, their largest and newest location. This salad offers an array of options of chicken salad, pimento cheese, Greek pasta salad, broccoli slaw, fresh fruit salad, baby bleu salad, Mandarin orange salad, chopped BLT salad, or garden salad.
Among these options I chose the chicken salad, baby blue, and broccoli slaw. I lightly drizzle Ashley’s Mac’s Poppyseed Vinaigrette over everything. The scoop of delicious white meat chicken salad is made of hand pulled chicken breast and includes bits of crisp celery, juicy red grapes and just enough mayo and special seasonings to give it added moisture and flavor. Easy to see and taste why Baby Bleu is their most popular salad. It is colorful, fresh, and sweet tart. Layers of mixed greens are crowned with fresh strawberry slices, Mandarin oranges, creamy crumbles of bleu cheese, and lovely sugared almonds. The flavorful broccoli slaw adds incredible crunchiness to the plate. It would make a lovely side with any dish. And the Salad Trio is served with a delicious tiny, warm sour cream biscuit and crackers, adding just enough starch to balance the dish.
